Beef Liver Creole
Ingredients:
1 pound Skylark Beef Liver
1 cup all-purpose flour
1 stalk celery, chopped
1 medium onion, chopped
1 medium green pepper, chopped
1 garlic clove, crushed
1 (16 ounce) can stewed tomatoes
¼ cup water
dash hot sauce
salt and pepper to taste
Instructions:
Heat oil in skillet over medium high heat. Cut Skylark Liver in strips, dredge in flour and add to pan. Cook until browned on each side. Fry in oil until done. Add celery, onion, pepper and garlic to the pan. Sauté until tender. Add tomatoes, water, salt and pepper. Reduce heat and simmer for 10 minutes.
